Serves 4

4 x 175g (6oz) Salmon Steaks
50g (2oz) Butter
7g (Ľoz) Ground Mace
7g (Ľoz) Ground Cloves
White Pepper
Butter, melted

Pre-heat oven to 180°C: 350°F: Gas 4.
Place the salmon in a buttered ovenproof dish, sprinkle with the mixed spices and pepper, dot with butter.
Cover with a lid or foil and bake for 30-35 minutes, basting occasionally.
Remove the salmon and drain well.
Allow to cool slightly, remove any skin and bones.
Flake the fish, press firmly into four ramekins.
Pour over melted butter to form a seal.
Place in the refrigerator, to chill.
Served with brown toast or fresh bread.
