4 Halibut Fillets
450ml (¾ pint) Tomato juice
1 Onion, sliced
4 tbsp Fresh Parsley, chopped
Salt and Freshly ground black pepper
Pre-heat oven to 200°C: 400°F: Gas 6.
Place the fish in a greased ovenproof dish.
Arrange the onion slices on top and sprinkle with half the parsley.
Pour on the tomato juice, season well with salt and pepper, cover with aluminium foil.
Bake for 30 minutes or until the fish is cooked.
Sprinkle with the remaining parsley and serve hot.
